How to make easy zucchini bread recipe with cranberries

Have you ever eat zucchini bread anyway? It is tasteful, isn’t it. This zucchini bread is one of my childhood favorite. At the time, zucchini bread was something my mom made me eat, and not anything you would bake into something sweet. To make easy zucchini bread recipe is easy and also quick, we just need 50 minutes to make it. With grated zucchini, mixed into the batter, brings moisture and tender texture to what is essentially a spice cake.

Ingredients of easy zucchini bread recipe:

  • 1 cup dried cranberries or raisins (this is optional )
  • 1 cup chopped pecans or walnuts (this is optional)
  • 2 teaspoons cinnamon
  • A half teaspoon nutmeg
  • 3 cups all-purpose flour
  • Pinch salt
  • 2 teaspoons baking soda
  • Two thirds cup melted unsalted butter
  • 3 cups grated fresh zucchini
  • 2 teaspoons vanilla
  • 1 and one thirds cup sugar
  • 2 eggs, beaten

How to make easy zucchini bread recipe with cranberries:

  1. First, you can heat the oven to 175 degrees Celscius or 350 degrees F. Butter two 5 by 9 inch loaf pans.
  2. In a large bowl, blend together the eggs, sugar,  and vanilla. Stir in the grated zucchini and then the melted butter.
  3. Drop baking soda and salt over the mixture and stir it in. Now add the flour, a third at a time, stirring after each incorporation. Add the cinnamon and nutmeg over the batter and mix. Fold in the nuts and dried cranberries or raisins if using.
  4. Distribute the batter equally between the loaf pans. Bake for 55 minutes (check for doneness at 50 minutes) or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.

I tried the recipe with pineapple weeks ago and was told that it was the best zucchini bread anyone’s ever had! It was so moist, and froze surprisingly well. The zucchini makes it so moist and tender and the pineapple lends a delicate tropical twist to every delicious slice.

  • 1 cup raisins, optional
  • 1 cup chopped nuts
  • A half teaspoon baking powder
  • 3/4 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 and a half teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 can (8 ounces) crushed pineapple, drained
  • 1 cup vegetable oil
  • 2 cups finely shredded zucchini
  • 3 eggs

How to make zucchini pineapple bread Recipe:

  • First, In a large bowl, mix the zucchini, eggs,  oil, vanilla and pineapple. Combine the dry ingredients; stir into egg mixture just until moistened. Fold in nuts and raisins if desired.
  • Now pour into two greased 8-in. x 4-in. loaf pans. Bake at 350 degrees for about 50 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool. You can serve it for 2 loaves.
