Oven Baked Fish Recipe

Ingredients of Oven Baked fish recipe:

  • 200g cherry tomato
  • 4 x 140g thick sustainable white fish fillets
  • 2 tbsp chopped flat-leaf parsley
  • zest 1 lemon
  • 50g fresh breadcrumbs
  • 2 tbsp olive oil
  • 500g floury potato , scrubbed and cut into chips (optional)

How to make Oven Baked Fish Recipe:

  1. Heat oven to 220C/200C fan/428F/gas mark 7 (Fairly hot). Keep potato chips dry on kitchen paper, then lay in a single layer on a large baking tray. Drizzle with half the olive oil and season with salt. Cook for 40 minutes, turning after 20 minutes, so they cook evenly.
  2. Mix the breadcrumbs, parsley and lemon zest, then season well. Top the cod evenly with the breadcrumb mixture, then drizzle with the remaining oil. Put in a roasting tin with the cherry tomatoes, then bake in the oven for the final 10 minutes of the chips’ cooking time
